In 2009 Hints Red Roof Maple was started with one main goal in mind, To produce quality New York State Maple syrup. Our maple operation begins with the tapping of 1,800 sugar maple trees.Then the maple sap is drawn from the sugar bush to the sugar house by a mid-sized vacuum system. Once the sap has reached the house it enters an exterior holding tank on the west side of the building until it is ready to be processed. after enough sap has accumulated, the sap enters a reverse osmosis machine. While this is happening, the fire to boil the sap is started.Then the long procedure to extract 98% of the water content begins. The boiling is done over a 10 hour period or until the maple reaches an average of 217 degrees, with an automatic draw off system the maple syrup is drawn of then, dimatious earth is added to help draw out any remaining impurities. Next the syrup is injected into a filter press then the syrup is put into a bottling pot where it is put into bottles and sealed.
